Ingredients :
- 100g rice flour
- 100g plain flour
- 275ml coconut milk from 1/2 coconut + 1/2 tsp salt
- 2 eggs, beaten lightly
- 90g castor sugar
- 7 cups oil for deep frying
Method :
- Mix all ingredients till smooth, strain to form a batter.
- Heat up oil in fryer, immerse beehives mould in hot oil.
- Dip mould into batter and deep fry till shape is formed and the color is golden brown.
- Dish and drain.
- When cool, store into an air tight container.
